Birthday Dinner




Meatloaf
Mashed Potatoes
Food Coloring

Preheat oven to 350

Line muffin tins with cupcake liners.  Divide meatloaf mixture between muffin tins.  Cook for about 1/2 hour, or until cooked through.

Make mashed potatoes and color them with food coloring.

When meatloaf is done, top with potatoes as frosting.

Put a candle in one for the birthday boy/girl :)

Michelle's Meatloaf

1 lb. Ground Beef
1 Egg
2/3 Cup Italian Bread Crumbs
1 Tsp. Onion Powder
1 Tsp. Oregano
1/2 Tsp. Garlic Powder
Fresh Mozzarella Pearls

Preheat oven to 350°.

Mix all ingredients together except the Mozzarella pearls.  Once ingredients are combined, add mozzarella pearls.  
Cook for about 45 minutes-hour.  Until cooked through.

Salmon Dinner


1 lb. Salmon
Lemon Juice
Potato
Shredded Parmigiana Cheese
Salad

Spray Salmon with cooking spray and cook in a skillet.  About six minutes per side.  Squeeze some fresh lemon juice on top.

Microwave 2 potatoes.  Cut in half, sprinkle with parmigiana cheese.

Serve with side salad and lemon wedge.


Found this online somewhere and tried it at home the other day!  SO yummy!

Apple Salad

Romaine Lettuce, washed, cut
1 Granny Smith Apple
1 Celery Stalk
Cheddar Cheese cut into small cubes
Feta Cheese
Croutons

Mix together in a salad bowl and serve with Balsamic Vinaigrette Dressing (I prefer Newman's Own).

Chicken Pie



Pie Crust (Ready Made)
1/2 Cup Butter
1/2 Cup Flour
2 Cups Milk
1 Cup Water
3 Chicken Bullion Packets
1/2 Tsp. Onion Powder
3 Chicken Breasts
1/2 Bag of Frozen Mixed Veggies

{reheat oven to 350°.


Roll out 1 pie crust and spread in a pie plate.  Poke with a fork so it does not bubble.  Bake in oven for about 10 minutes, or until slightly crispy.

Melt butter in a sauté pan.  Once the butter is melted, add the flour.  Bring to a boil and boil for one minute, being careful not to let the mixture stick to the pan; you may want to use a whisk.  Next, add the water and milk.  Again, be careful not to let it stick.  Add the bullion packets and onion powder.  Bring to a boil and let boil for one minute.  Remove from heat.

Next, cut up chicken into bite size pieces.  Spray a skillet with cooking spray and add chicken.  Season with onion powder.  Cook chicken until still pink on the inside.

Add chicken and frozen vegetables to white sauce.  Pour into pie crust.  Top with 2nd pie crust; make sure sides are sealed tightly to avoid any leakage.

Bake for about 45 minutes or until crust is golden brown.
